Blueberry Lemon Giacciolo (Italian Popsicles)

Don't be intimidated by the name. It is actually pretty easy to say. You pronounce it like, GHEE-A-CHOLO. It is simply an Italian popsicle. Our version includes, but of course, olive oil! Don't fret if you don't have popsicle molds, or don't want to run out and buy some. Simply use small paper cups as your mold and insert sticks once the popsicles start to set up a bit so they don't fall over.



2 cups fresh blueberries

1 cup full fat plain yogurt

1/2 cup local honey


In a medium sauce pan over medium heat, add the blueberries and two tablespoons of water along with the honey. Bring to a simmer and cook for two minutes. Allow the mixture to cool and then add the yogurt and olive oil. Whisk together. If you choose a consistency a little less chunky, simply use an immersion blender and whirl it about to pureé everything together. Pour mixture into popsicle molds and freeze till firm. Enjoy!


*You can also use Persian Lime Olive Oil or Blood Orange Olive Oil. Feel free to change this recipe up with other fruits or berries as well.
