Olive Oil Sugar Cookies

It shouldn’t be surprising that we go through a lot of olive oil. It’s our go-to oil and we couldn’t live without it. My guess is that most, often overlook olive oil for baking in lieu of butter. Olive oil is amazing in baking and can be used in place of other oils or butter in recipes and mixes. It makes baked goods far more tender and moist. Not to mention that it adds wonderful health benefits that butter and other oils can't. It may sound a bit odd, but a few grinds of fresh black pepper and a little balsamic vinegar and it truly brings out the sweetness of ripe strawberries. 2 cups sliced, hulled strawberries (from about 1 pound berries) 1/4 cup sugar 2 1/2 tablespoons Strawberry Balsamic Vinegar Freshly ground black pepper Place the strawberries and sugar in a food processor and pulse just until the mixture is finely chopped and juicy but still chunky; you don't want a smooth purée. This Lemon-Blueberry Cobbler is a quick, easy dessert, perfect for showcasing those summer blueberries!
