Easy Lemon Blueberry Cobbler

This Lemon-Blueberry Cobbler is a quick, easy dessert, perfect for showcasing those summer blueberries! It comes together with just 10 minutes prep and only five ingredients!

1/2 cup (+ more for greasing pan) Eureka Lemon Olive Oil

1 cup self-rising flour*

1 cup sugar

1 cup milk

4 cups fresh blueberries

1 tbsp Blueberry Dark Balsamic Vinegar

Preheat oven to 350 degrees. Grease an 8-inch square baking dish with a small drizzle of Eureka Lemon Olive Oil.

Mix flour, sugar, Eureka Lemon Olive Oil and milk in a bowl until combined; pour batter into prepared pan. In a separate bowl sprinkle Blueberry Dark Balsamic Vinegar on blueberries. Toss to coat. Top the batter evenly with blueberries mixture

Bake at 350 for 35-45 minutes or until cobbler is light brown across the entire dish. Serve warm with a scoop of ice cream.

COOK'S NOTE* If you don't have self-rising flour, simply add1½ teaspoons of baking powder and ¼ teaspoon of kosher salt to 1 cup of all-purpose flour.
