Easy Lemon Blueberry Cobbler

This Lemon-Blueberry Cobbler is a quick, easy dessert, perfect for showcasing those summer blueberries! It comes together with just 10 minutes prep and only five ingredients!

1/2 cup (+ more for greasing pan) Eureka Lemon Olive Oil

1 cup self-rising flour

1 cup sugar

1 cup milk

4 cups fresh blueberries

Preheat oven to 350 degrees. Grease an 8-inch square baking dish with a small drizzle of Eureka Lemon Olive Oil.

Mix flour, sugar, Eureka Lemon Olive Oil and milk in a bowl until combined; pour batter into prepared pan. Scatter blueberries over batter.

Bake in preheated oven until a toothpick inserted into the center comes out clean, about 1 hour.
