Easy Lemon Blueberry Cobbler
This Lemon-Blueberry Cobbler is a quick, easy dessert, perfect for showcasing those summer blueberries! It comes together with just 10 minutes prep and only a few ingredients!
1/2 cup Eureka Lemon Olive Oil
1 cup self-rising flour*
1 cup sugar + 1 tbsp
1 cup milk
1 tsp vanilla extract
4 cups fresh blueberries
Preheat oven to 350 degrees. Pour into an 8-inch square baking dish the 1/2 cup of Eureka Lemon Olive Oil.
Mix flour, sugar, vanilla and milk in a bowl until combined; pour batter into prepared pan. In a separate bowl sprinkle Blueberry Dark Balsamic Vinegar on blueberries and sprinkle with one tablespoon of sugar. Toss to coat. Top the batter evenly with blueberries mixture
Bake at 350 for 35-45 minutes or until cobbler is light brown across the entire dish. Serve warm with a scoop of ice cream.
COOK'S NOTE* If you don't have self-rising flour, simply add1½ teaspoons of baking powder and ¼ teaspoon of kosher salt to 1 cup of all-purpose flour.
