Pimento Cheese Pasta Salad
If you've ever tried our homemade Pimento Cheese, then you will absolutely love this easy recipe! Perfect for tailgates, picnics and potlucks. It's sure to be a winner!
1 16 oz package of elbow macaroni
1 8 oz block of cream cheese, softened
1/2 cup sour cream
1/2 cup of Green Chili or Chipotle Olive Oil
1 4 oz jar of pimentos, diced
1/2 tsp garlic powder
2 cups shredded extra sharp cheddar cheese
1/4 cup thinly sliced green onion
1 cup diced celery
salt and pepper to taste
Follow the instructions on the package of your pasta and boil in salted water. Drain and set aside to cool to room temperature. For the pimento cheese, combine remaining ingredients into a mixing bowl and cream using an electric mixer. Season with salt and pepper to taste. Toss with cooled pasta. It's great, day of, but you can also make this a day in advance and let it sit in the fridge overnight. Perfect for a potluck, picnic or tailgate!
